We used it the day after we received it. This is the first time using Bucher paper for smoking. It works ,my burned ends were great. Had lots of compliments. I decided to quit wrapping using foil, which I had done for years, and give butcher paper a try. I should have done this a long time ago! This paper is great. Bark stays firm and not as mushy as when using foil. Will definitely buy this again. Does what you need it to. Also great for keeping things clean while preparing everything and letting a rub settle before throwing on the smoke. The butcher paper works great for wrapping smoked meat after it's completed the smoking
process but not the cooking process. Meat turned out perfect. Would
recommend and will reorder.
The brown butcher paper wrap works great as I just did a full brisket and using the wrap after 6 hours of smoke left it very tender and moist, I also saved the juice to add to the flavor by just draining into a jar from the paper. Works even better than aluminum wrap.
The butcher paper is a game-changer for making tender, moist brisket and ribs. And, it works great for my customers to warm up their meats for later.I haven't quite got the knack of putting a good wrap on my meat yet in the smoker but I love the texture and flavor it gives. Used it for wrapping smoked chicken quarters. They stayed juicy and were great!! The roll is BIG!! Looking forward to using it for a long time..
This butcher paper is great (and safe) to wrap brisket to finish off the smoking process. Several friends commented on the paper and asked where to purchase it. This is serious paper, not thin and will hold up to heat fluctuations. There's not much to say - it's simple, unlined butcher paper. It works fine. It was too narrow to wrap a 10 lb brisket and stay in place. I tried laying the brisket both across and length wise but the paper wouldn't completely wrap around the meat and stay closed. We used some twine to hold it. Not a big deal. Next time, I'll just tear 2 sheets to make it easier to wrap.
