I used the butcher paper to smoke a 1/2 brisket, the day I received it, and I have to say I was surprised at the results! The flavor was better, it was more tender. I used it on Christmas day to smoke pork ribs, again, the flavor was great, the ribs were not "fall off the bone" but they were more tinder than I've gotten before. I would recommend to anyone who uses a smoker. Exactly what you need to wrap your brisket and ribs. Brisket turned out amazingly! Can't wait to use it again. Held my bark good but also let excess moisture escape.
I use butcher paper for finishing off my bbq brisket. It's just what I wanted and needed. It does not impart any odd flavors or odors to the meat. That's important to me since there is some time that the wrapped meat is actually being heated in the paper. The butcher paper is simply what it says it is-and that’s great. Excellent wrapping paper for BBQ. I wrap brisket, ribs and pork butt at different temperatures when I smoke them. Perfect weight paper that allows the meat to breathe, juices absorb back into the meat and continue to cook. Wrapped a brisket and pork butt in this paper, worked great! Kept the bark nice on the outside while continuing to cook to reach the right temperature. We will be ordering again. I was waiting for this. As soon as I received it, I put it to use on a brisket. This was the best brisket that I have ever made so far.
Wrapped a 16lb brisket after a 13 hour smoke which was then placed in a cooler for 2 hours before serving. Unlike aluminum foil, wax paper, or store branded parchment paper; this quality brown butcher paper kept the perfect amount of heat in as was just porous enough to let the right amount out which protected my bark. I will only use this paper moving forward and we smoke meats 2-3 times a week. Bought this butcher paper for our meat smoking endeavors, and so far so good! Thick, good quality paper holds in the juices when I’m the smoker and is easy to use and wrap (and clean up!). Would recommend! It worked as expected. Good heavy duty paper. Just wish it was wider but it still got the job done. No wax or other nasties to get in the way of a good smoked brisket.
In the past, to get over the temp stall, I would use aluminum foil for my crutch for brisket. Could not ever achieve bark that would be crisp and flavorful (terrible burnt ends). With the Pink Butcher Paper, I have achieved ecstasy with the best brisket that is moist but with crisp bark ever (and of course the point's burn ends are Unbelievable). Believe that this process with pink butcher paper is going to be a long term brisket smoking experience for me. Cant wait to try this with my other adventures in smoking - pork and chicken. In summary, an excellent product that hits the mark for me.
